Doughnut Cookies

Hey all! I wanted to make something simple, so I went with this cute recipe from With Sprinkles on Top. It was really easy to make, and they are quite tasty. Anyhow, enjoy. 🙂

Cookie Ingredients:

2 Tbsp. vegetable oil

3 Tbsp. melted butter

2 eggs

2 tsp. vanilla extract

1/2 tsp almond extract

3/4 tsp salt

2 tsp. baking powder

1 cup powdered sugar

2 1/2 cups flour

Decoration Ingredients:

1/2 cup semi sweet chocolate chips

2 Tbsp. margarine or butter

 

Directions:

1. Preheat oven to 350 F. Spray cookie sheets lightly with oil. Mix together the first 5 ingredients together until well blended.

2. Sift in the dry ingredients one at a time, and mix until well blended. If the dough is too dry, add a small amount of oil and knead until pliable.

3. Pinch off 2 tsp. sections of dough and roll into strips. Then twist around your finger to make a small doughnut shape!

4. Bake for 16-18 minutes until edges are slightly brown. Cool for five minutes on the cookie sheet, and then move to wire racks to cool completely.

5. Melt chocolate chips and margarine carefully in microwave. Take completely cooled cookies and dip each into melted chocolate. Then, if you like, dip them into a bowl of sprinkles.
